Sicilian Stuffed Beef Rolls in Marinara Sauce

Ingredients:
2 pounds lean ground beef
2 eggs, beaten
½ cup tomato juice
¾ cup soft bread crumbs
2 tablespoons fresh parsley, chopped
1 clove garlic, minced
½ teaspoon dried oregano, crushed
¼ teaspoon sea salt
¼ teaspoon ground black pepper
6 ounces thinly sliced prosciutto or ham
6 ounces mozzarella cheese, sliced
2 cups marinara sauce
Instructions:
Prepare the Meat Mixture: In a large bowl, combine the beaten eggs and tomato juice. Stir in the bread crumbs, parsley, minced garlic, oregano, salt, and pepper. Add the ground beef and mix thoroughly until all ingredients are well combined.
Shape and Fill the Meat Roll: On a piece of foil or waxed paper, pat and shape the meat mixture into a 10×8 inch rectangle. Arrange the prosciutto slices on top of the meat, leaving a small margin around the edges. Tear the mozzarella slices (reserving one slice) and sprinkle evenly over the prosciutto………….
